Meet Our Owner
Coco is the vision of Robin who has spent the last 25 years in the hospitality industry. Robin attended culinary school and has worked as a chef in various capacities of kitchens in hotels, yachts, and in other far flung places around the world while fine tuning her skills. Robin even dabbled in a little bartending in the early days of her career, which helped her realize her desire to change things up a bit.
Using her experience and expertise in creating culinary delights, Robin brings that same talent to the bar, designing delicious, hand crafted cocktails for her clients.
The name Coco is an homage to Robin's beloved little dog and best friend who passed away the day the mobile bar was purchased. The foundation of this business was built on everything Coco the dog embodied, kindness, inclusivity, always happy and excited and up for a good party anytime!
Amazing Transformation
What started as just idea became a labor of love with the purchase of an unassuming 1970's trailer. For eight months, Robin and her husband Rey worked day in and day out to gut, rebuild, paint and shape what is now the beloved Coco.
